Avocado Pudding - two ways



Chocolate avocado pudding was probably the first healthy vegan dessert I tried when we started this journey 4 years ago and loved it form the start. Using avocado to make dessert who would have thought and it is so delicious and this is the only way my older son would eat avocado (my younger one loves to eat it either way). It works amazingly as a Chocolate Frosting on cakes too! Last week I tried a new version of avocado pudding - a green super food version aka Hulk approved! Let me tell you how it is done, here its is avocado pudding two ways:


Avocado Chocolate Pudding:

Ingredients:

  • 2 ripe avocados

  • 1 tsp raw cacao powder or carob powder

  • sweetener: 1 tbs maple syrup, date syrup or 1 banana

  • optionally a bit of plant based milk (if texture is too thick)

Blend all in food processor until smooth and this is it! Skip the milk and this will give thick chocolate frosting that will work well on a chocolate cake. If you feel fancy add some chia seeds in it, top with fresh fruits.

Protein Packed Green Superfood Avocado Pudding


This pudding is enhanced with spirulina and other super-powders and you can add plant based protein powder for your post/pre workout meals.

Ingredients:

  • 2 ripe avocados

  • 1 tsp spirulina (superfood that gives rich green colour),

  • optionally add more of the superfoods you have them at home, 1tsp maca powder, wheatgrass, matcha

  • 1 TBS maple syrup or 1 banana

  • 1 scoop plant based protein powder

  • a dash of plant based milk (dash would be anything from 50 ml)

Blend all in food processor, adding more milk if you desire more liquid consistency.

This is another easy way to give my kids superfoods, after smoothies of course. Both of my kids loved this green pudding. For any active gym rats, this is another way for you to consume your protein powders, I sometimes include them in my diet, they are not my regular additions, I just do not like to drink protein shakes they taste weird to me however this version I do love.

You can top it with coconut flakes or fruit. I think this is a great option for a healthy dessert or breakfast.

For both pudding sweeten it to your taste, for me 1 banana or 1 TBS maple syrup is enough for you may not be, adding fresh dates would be also good idea.
