Gingerbread cookies - 3 favourite recipes

This weekend I made a loooot of cookies, I used two favourite recipes and played with one a bit. All turned out good, so I highly recommend trying them all and finding your favourite flavour. One is from Polish Blog - Jadlonomia, the other one is Gluten Free (Buckwheat and Nutty) from Deliciously Ella and last one my twist on Ella's recipe. So here they are:

RECIPE No. 1 

First one is from a Polish Genius Blogger - Marta Dymek and her blog Jadlonomia. As the blog is only in Polish I have made a quick translation for my non - Polish Speaking readers.


Gingerbread cookies recipe aka Pierniczki.

Ingredients (20-30 cookies):

2 1/4 cup of flour (I used oat flour)

3/4 cup brown sugar ( I used coconut sugar)

1/2 cup oil (I use grape seed oil, or coconut oil)

2 TBS spice mix (ginger, cinammon, kardamom, vanilla beans)

3-5 TBS cold water

pinch of salt

1/2 tsp baking soda

Icing (optional, I prefer without):

1/2 cup icing sugar

few drops of beetroot juice (lemon juice is also ok).

Method:

Mix all ingredients by hand or using food processor, I mix everything in my Thermomix. If the mixture is too dry add a bit of water. Knead the dough and shape into a ball. Cover with a foil and place in the fridge to rest for 30min or so. Heat up the over on 180C. After 30 mins rest time knead the dough in your hands, split the mixture and start rolling out with rolling pin, then cut out cookies with cookie cutters and repeat until you use all the dough. Place the cookies on the baking tin, I used silicone cookie mat and worked really well, you can use baking paper.

Bake for 8-10 mins at 180C.

If you want icing for cookies. Add beetroot juice (or lemon juice) into glass with icing sugar and rapidly mix with a spoon. Add icing on cookies. Enjoy!

This was my favorite recipe, I love using buckwheat or millet (naturally gluten free grains) and nuts in cookies, and they are gluten free for those who prefer to avoid it. In this recipe I also added not only ginger but also cinammon, cardamom, nutmeg and vanilla beans. This recipe also asks for only 1 TBS of oil and cookies are super delicious.

RECIPE No. 3


Third recipe is my own twist on Deliciously Ella recipe. As this was my favourite using buckwheat (millet is also good to use) and nuts instead of flour, I just added some more seeds, no oil but peanut butter and with a bit of carob to get extra nutty flavour and darker colour.


Here is my twist on Deliciously Ella recipe (link to original recipe above).

Ingredients:

2 cups buckwheat flour ( I just made it by grinding buckwheat groats),

2 cups almonds, 

1 cup seeds (sunflower and pumpkin seeds),

1/2 cup water,

1/2 cup maple syrup,

4 TBS spice mix (Ginger, kardamom, vanilla beans, cinammon), 

1 TBS carob (cacao also good),

2 TBS chia seeds,

2 TBS peanut butter,

85ml water.

I placed everything in my Thermomix (good food processor will do the job too, but grind buckwheat and nuts into flour first. Blend everything well. Knead by hands for a bit, shape into one big ball then split it into 4 smaller balls. Start rolling out the dough with rolling pin and cut the cookies with cookie cutters or using a glass or if you are not bothered shape them by hand. 

Bake at 180C for 20 mins.
