Here are some ice lollies to the rescue for the extreme heat wave we experience in Netherlands! Who would have thought?! We have hot summer days for at least last two months!
These easy to make ice lollies in any flavour you imagine, made in reusable ice molds to make at home. Here is recipe for the refreshing lemon flavour:
freshly squeezed lemon juice from 4 lemons
1/2 cup of water
1 tsp of sweetener of choice, I chose agave as it is flavourless, so you get to taste the lemons.
In a small saucepan combine all ingredients and start warming up. Stir until sweetener combines well with the rest of the ingredients. Take off the heat and stir well and cool down. Check if this is the right amout of lemon or sweetness for you. It will be quite sour, I love it, but everyone has different taste, so adjust to your needs, maybe adding more water would be the solution. Pour down into ice molds and place in the freezer. Let it set for 8 hours. Before consumption rinse under the tap with warm water for 15 secs and the cover would remove easily.
Play with the flavours, by adding fresh mint leaves or chose any other fruit. My next one will be water melon ice lollies.
If you prefer milk flavoured lollies, combine any fruits with coconut milk, can make it chocolate adding raw cacao/carob powder and maple syrup. The other day I made: peanut butter, banana, coconut milk, maple syrup and carob. Share with me your favourite flavours mixes.
